What is a beef share?

A Beef Share offers you the opportunity to secure a guaranteed portion of one of our 100% grass-fed cows, raised using regenerative land practices. By placing a deposit on the share size that best suits your family, you ensure that you'll receive premium-quality beef after our main harvest in late summer. The beef will be available from October to December.

Availability is limited and based on a first-come, first-served basis. We only sell as many shares as we are confident we can fulfill, ensuring the highest standards of quality and reliability for our customers. How is KRCC bulk beef different from grocery store beef?

How long will our beef last in the freezer?

Vacuum-sealed beef will stay fresh in your freezer for one year. We've eaten beef that's been frozen slightly longer than a year and it's still delicious!

How much freezer space do I need for my beef?

A rule of thumb is 30 to 35 pounds of beef needs 1 cubic foot of storage. 

You want to make sure you have the freezer space to hold your beef. Since your beef won't be ready until October - December, you will have plenty of time to find the right size freezer. This is essential so your beef can stay frozen.

1/8 Beef Share: requires approximately 1.5 - 2.0 cubic ft. of freezer space. This will fit in a regular fridge-freezer compartment. It will take about half the space, which will leave room for other goods. No big freezer needed.

1/4 Beef Share: requires approximately 3.5 - 4.0 cubic ft. of freezer space. This will fit in a small chest/upright freezer.

1/2 Beef Share: requires approximately 6-8 cubic ft. of freezer space. This will fit in a large chest/upright freezer.

Whole Beef: requires approximately 14 - 16 cubic ft. of freezer space. This will fit in a large chest/upright freezer.

How many pounds of beef can I expect?

You get to choose which share you need to feed your family. We offer 4 standard sizes: 

• 1/8th Share (30-35 pounds): Perfect if you don't have a chest freezer, or just need to top up your supply.

• 1/4 Share (60-70 pounds): Our BEST SELLER! A great way to get started. The right size for a family or couple.

• 1/2 Share (125-135 pounds): Perfect for larger families or families that cook often.

• Whole Beef Share (250-270 pounds): Huge family, multiple hungry teenagers, or love to entertain? This is for you!

Each share is slightly different, but on average, you can expect 60-65% assorted beef cuts and 35-40% ground beef.

What specific cuts can I expect in my share?

Every cow is a little different so we may have to make substitutions with a cut of equal or greater value. We always make sure every single share is at least the stated weight.

Where is your beef processed?

Our beef is processed at Markwell Processing, located in Lawrenceburg, Kentucky. With over 40 years of experience in processing both beef and deer, Markwell Processing ensures that our beef is handled with expertise and care, maintaining the highest standards of quality and safety throughout the processing journey.

How is your beef wrapped and packaged?

All of our assorted cuts and free extras arrive frozen and wrapped in individually vacuum sealed packages for the freshest flavor. Ground beef is wrapped in 2 lb tube packaging. 

We have an awesome butcher at Markwell Processing. Their packaging and processing is second to none!

Is your beef dry aged?

Yes! Your beef will be dry aged for 21 days to increase tenderness and flavor. We have found this to be the optimal time for our grass-fed beef. It's worth the wait!

What's the difference between KRCC's grass-fed beef and feedlot grocery store beef?

While all beef animals begin their lives on pasture during the growth phase, not all are finished on pastured forage. Unlike grocery store beef, which typically spends the last 3+ months of its life in a feedlot consuming a diet of at least 70% grain from a concrete feed bunk, our approach is fundamentally different.

At Kentucky River Cattle Company, our grass-fed cattle are raised and finished entirely on pasture during the peak growing season when the grass is at its highest nutritional value. This natural approach yields a marked contrast in the quality and composition of our beef.

Do your cows eat grain?

At Kentucky River Cattle Company, we prioritize the health and well-being of our cattle by aligning our ranching practices with the natural rhythms of the land. Our commitment to ethical and sustainable farming means that our cows are not finished on grain.

Throughout the year, ranching experiences distinct seasons: a vibrant growing season when the grass is lush and green, followed by a dormant season when the grass ceases to grow. During the dormant season, the nutritional content of the grass declines, resulting in lower levels of protein, energy, minerals, and vitamins.

To ensure the health of our animals during this period, we supplement their diet with proteins, vitamins, and minerals, akin to nutritional supplementation in humans. While the grass in Central Kentucky may be lower in nutritional value during the winter compared to cooler regions, we take proactive measures to address these deficiencies.

Unlike conventional practices that rely heavily on feeding hay for up to 120 days during the winter, we have determined that our approach, which involves supplementing with alfalfa, is not only more sustainable but also better for the pasture.

What types of grasses do your cows eat?

Our cows enjoy a diverse diet of nutrient-rich forages, including fescue, Kentucky bluegrass, orchard grass, clover, and alfalfa. Thanks to our unique microclimate, these grasses thrive, providing our cattle with the best possible nutrition.

We ensure our cows graze on these high-quality forages for at least 5-6 months before slaughtering them during the peak growing season, when the grass is at its most nutritious. This careful timing guarantees that our beef is exceptionally flavorful and packed with essential nutrients.

Is your beef antibiotic free?

We never give antibiotics to our bulk beef animals.

Is your beef hormone free?

YES! All our beef is 100% naturally raised and hormone-free.

Do you use pesticides, insecticides, fungicides, chemical fertilizers, etc.?

Never! Our entire grazing practice is meticulously designed to enhance the land without relying on these conventional inputs. By utilizing regenerative grazing techniques and rotational grazing methods, we harness the natural symbiosis between cattle and the environment to improve soil health, promote biodiversity, and restore ecosystems.

Any special cooking advice for cooking grass-fed beef?

Cooking grass-fed beef is a delightful experience that offers unique flavors and textures. Here are some special cooking tips to ensure you get the most out of your grass-finished beef:

1. Optimal Cooking Temperatures: Grass-fed beef cooks more quickly than grocery store beef and is best enjoyed at rare to medium-rare temperatures. How much deposit is required to reserve Kentucky River Cattle Company bulk beef?

To reserve bulk beef from Kentucky River Cattle Company, a deposit of about 50% of the total purchase price is required. This deposit secures your share of our premium grass-fed beef, ensuring that you'll have a supply of high-quality meat for your family's enjoyment.

Why is the deposit non-refundable?

When you reserve a share of our premium grass-fed beef, that share is exclusively yours. Your name is firmly affixed to the reserved portion of the animal. The non-refundable deposit serves a crucial purpose in our operational process, facilitating meticulous planning and coordination with various entities involved in delivering a superior product.

We utilize your deposit to strategically plan our herd sustainably and coordinate processing dates with our butcher. Subsequently, we synchronize shipping dates with our trusted partner, Periship. This intricate orchestration ensures that every piece aligns seamlessly to deliver a premium, high-quality product to your doorstep.

Given the perishable nature of beef, timely delivery is paramount. We aim to dispatch your beef shortly after processing to provide ample time for you and our other valued customers to savor its exceptional quality over the course of a year.

In the event that a customer is unable to fulfill the second payment of their beef share, we are faced with the challenge of swiftly finding a replacement to prevent any wastage of the meticulously raised cattle. Our commitment to ethical farming extends to ensuring that each animal's life is honored and respected, and none are needlessly wasted.

What are my payment options?

We accept credit cards, debit cards, Paypal, Shop Pay, and Amazon Pay.

Can you tell me ahead of time how much my final payment will be?

We don’t know exactly how much the final payment will be until the butcher sends us hanging weights. We will email you with the final amount due when your animal is at the processing facility.

We ask that you pay the balance due prior to your shipping date or upon pick-up (if you choose to pick up directly at our ranch). We will not ship your beef until we receive final payment.

Do you offer refunds?

While we do not offer refunds, we do want every customer to be happy! Which is why we offer a happiness guarantee. We stand by our products 100%, no matter what. If you have a problem, we will solve it. Just reach out to our team and we’ll make it right.

How do you ship your beef frozen?

Rest assured, we take every measure to ensure your beef arrives frozen and in pristine condition. We utilize an insulated box liner and frozen gel packs to maintain optimal temperatures throughout the shipping process. Regardless of your location, your beef will arrive frozen and ready to enjoy.

Please note: In the rare event of extreme heat conditions, our shipping processor will notify us. In such cases, we will delay delivery until it is safe to ship your beef. Your satisfaction and the quality of your beef are our top priorities.

Can you ship a whole beef?

Absolutely, we can ship a whole beef directly to your doorstep! Your beef will be carefully packaged in multiple boxes. To maintain optimal temperatures during transit, we include frozen gel packs, especially in warmer climates.

We partner with Periship, a specialized company experienced in shipping perishable items nationwide. With their expertise, you can trust that your beef will arrive frozen and in perfect condition, regardless of your location.

What if I'm not home when my shipment arrives?

For your convenience, no signature is required for delivery of your beef order. Rest assured, your package will be thoughtfully packed to maintain the optimal temperature, ensuring your beef remains frozen even if you're unable to unbox it immediately upon delivery.

When do I get my beef?

Bulk beef fulfillment will begin in mid to late October and last for 2 months. The first orders in will be the first orders out.

We will message you when your beef is ready and send your final payment invoice before shipping to ensure there are no surprises.
